Here’s a quick and easy salmon recipe that combines the bright flavor of lemon, the savory aspect of garlic, and the fresh flavor of dill. Plus salmon is packed with omega 3’s, which provide numerous benefits for our bodies. Here fishy fishy…
- Salmon fillet, divided into serving size portions if it’s a big fillet
- 1 lemon, thinly sliced
- 2-3 garlic cloves, sliced
- 1 tsp fresh dill, or 1/2 teaspoon dried dill
- 1.5 tbsp ghee
- salt & pepper
Preheat oven to 400º.
Grease a glass baking dish with some ghee. Place salmon, skin side down, in dish.
Melt about 1 tablespoon of ghee over medium heat in small frying pan. Pan fry the sliced garlic until brown. This will happen QUICKLY, so don’t leave the garlic. Lightly browned garlic will only take 30-45 seconds. Drain the garlic on a paper towel, but save the ghee in the pan.
Make small slices in the salmon every inch or so, and stuff a slice of fried garlic in each (make the slice deep enough to stuff the garlic all the way into the fish). Drizzle the ghee from the pan over the salmon, and use a basting brush to coat evenly. Generously season with salt, pepper, and dill. Lay the lemon slices over the salmon.
Bake in oven 12-15 minutes for just done (depending on the thickness of your salmon fillet), 20 minutes if you like your fish well done. Serve with lemon wedges to squeeze over the fish, and a veggie on the side. Delish!
