A few years back I got it in my head that I needed an immersion blender, and therefore requested it as a gift from my husband. He often shies away from buying me kitchen gadgets as presents. Not romantic enough for him. But I love me a good kitchen gadget, and he granted my wish.
I can’t sing the praises of the immersion blender enough. And I don’t even use it that often! But when I do, I sure am glad I have it.

Here’s one of my favorite recipes to bust out my immersion blender for; delicious vegan refried beans. I don’t know how I stumbled across this little gem of a recipe, but everyone that has tried it loves it. If yo don’t have an immersion blender you can still make them. You just have to hand mash them with a pototo masher, which is how I used to do it before I had my immersion blender.
